This simple yet surprisingly impressive alternative pancake recipe comes from the clever team that is Melrose and Morgan in London. This speciality grocer and deli features it on their website. It is part pancake and part souffle but the real beauty of this recipe is that the infamous ‘first pancake' no longer needs to end up in the bin!
Ingredients for 1 large pancake to share:
- 75g plain flour
- 120ml milk
- 2 eggs, lightly beaten
- Freshly grated nutmeg (optional)
- 30g butter
- Icing sugar and juice of half a lemon to flavour
- Pinch of salt
Method:
Heat your oven to 220ºC
Combine flour, milk, eggs and nutmeg in a bowl and lightly beat (note: do not over beat, a few lumps are fine). Heat the pan on a mdium heat and melt the butter until sizzling. Pour the batter into the pan and immediately transfer to the centre of the oven and bake for 10 minutes. Do not be tempted to open the door!
Remove from the oven and finish with a dusting of icing sugar and a squeeze of fresh lemon juice.
Serve with a drizzle of honey or a flavoured sugar.
