Articles | Easy Breakfast-in-one Muffin
Ingredients:
- 4 eggs
- Splash of milk
- 1 tsp dried mustard powder
- Choice of fillings
Method
- Grease a muffin tin well and preheat the oven to 200ºC
- In a bowl mix together 4 eggs with a good splash of milk, pepper and a tsp of dried mustard powder.
- Fill your muffin cups up to half way with your breakfast of choice: grated cheese, cooked bacon or ham, fried onion, mushrooms, spinach, chunks of bread, whatever you choose.
- Top with the egg mixture remembering that this will fluff up so only about ¾ full. Bake for 10-15 minutes until cooked through, golden and risen.
- Leave to cool for a few minutes before removing and serving.
