Easy Breakfast-in-one Muffin

Ingredients:

  • 4 eggs
  • Splash of milk
  • 1 tsp dried mustard powder
  • Choice of fillings

Method

  • Grease a muffin tin well and preheat the oven to 200ºC
  • In a bowl mix together 4 eggs with a good splash of milk, pepper and a tsp of dried mustard powder.
  • Fill your muffin cups up to half way with your breakfast of choice: grated cheese, cooked bacon or ham, fried onion, mushrooms, spinach, chunks of bread, whatever you choose.
  • Top with the egg mixture remembering that this will fluff up so only about ¾ full. Bake for 10-15 minutes until cooked through, golden and risen.
  • Leave to cool for a few minutes before removing and serving.
