When nature gives you seasonal produce like asparagus and Jersey Royals there is really nothing better than treating them with respect and doing the minimal possible to these treasures so no specific recipes this month, just serving suggestions:
Asparagus: wrap in parma ham and roast, add an aioli or home-made mayonnaise, classic hollandaise, make risotto or omelettes and use the ends for soups and dips as long as you break down the really woody bits. In your café serve simply on your brunch or lunch menu with a soft boiled egg for the ultimate dippy egg.
Jersey Royals: are perfect naked sprinkled with salt and butter but also consider cooking on the BBQ in a foil bag. If you want to push the boat out add some chiffoned fresh mint.
Create displays of bagged potatoes, mint plants and salts with foil if you have it.
Primavera literally translates as Spring from Italian or Spanish and with asparagus, new seasons peas and broad beans it is an ideal combi to apply to your recipe ideas whether in salads, sandwiches, pastas or pulses.
